Hạt dẻ rửa sạch, xếp vào khay nướng sơ tầm 5 phút ở nhiệt độ 160 độ C đến khi hạt dẻ nứt vỏ. Tách bỏ vỏ cứng bên ngoài, dùng dao gọt bỏ phần vỏ lụa bên ngoài hạt dẻ, nếu quả lớn thì bổ làm đôi.
Gừng rửa sạch, cạo sơ vỏ, cắt sợi.
Cánh gà rửa sạch, cắt thành từng miếng vừa ăn, cho vào âu cánh gà 1 muỗng cà phê muối, 1/4 muông cà phê tiêu, hành tím băm, ướp khoảng 1 tiếng.
Đun nóng dầu điều, phi tỏi thơm, cho cánh gà vào, dùng đũa đảo đều đến khi thịt gà săn lại thì cho tiếp gừng vào đảo cùng.
Rưới 1 muỗng cà phê nước mắm vào nồi thịt gà, đậy kín nắp nồi đun lửa nhỏ, thêm nước màu vào đun khoảng 5-10 phút, tiếp theo cho hạt dẻ vào đun cùng.
Đun tiếp lửa nhỏ và đậy kín nắp nồi, nếu cạn nước rưới thêm một ít nước sôi nóng, nêm gia vị vừa ăn, đun đến khi cánh gà mềm thấm gia vị.
Tắt bếp, múc ra chén rắc một ít tiêu lên bề mặt dùng làm món mặn ăn với cơm.
